I am inspired to eat healthy when my food looks beautiful and enticing

Most of us hate spending the time to peel vegetables just end up ravished when we are done. One thing I have learned through my wellness journey is that I can inspired healthy eating by using my creative side and making the food look incredibly appealing even if it takes a few extra minutes to prepare. Every home should enjoy a beautiful, fresh, aromatic Greek salad. You can pretend you are traveling the Mediterranean if you want:)
GREEK SALAD

1 Head of Romaine Lettuce
A couple of handfuls of fresh spinach leaves
1 Medium red onion
3 Roma Tomato's
2 Pickling cucumbers (Regular cucks will do)
3/4 Cup of FRESH goat feta
1/2 C of marinated kalamata olives
2TB of oregano
salt/cracked pepper to taste
3/4 C of Olive Oil
1 Freshly Squeezed Lemon
1/4 C of Vineger your choice
Toss and marinate for 15 minutes and Enjoy with a crusty loaf of Bread. We love to add grilled chicken to the salad to make it a meal
